Far too often, a clear understanding of potential risks & how to best integrate the actual demands of a foodservice program are missing from the planning, design, and construction phases of restaurant projects. The application of our multi-industry experience offers hospitality clients, as well as Landlords & Developers, the opportunity to better protect their investment as they execute their project vision. Josh Drew, Founder + Principal

With over 15 years in foodservice & hospitality, followed by 10+ years in construction & development, Josh’s expertise integrates the day-to-day ergonomics of foodservice operations with the specific demands of architecture, engineering, and design within the development process. Over the course of his culinary career, he has had the privilege to work in the kitchens of Thomas Keller, Michael Tusk, & Marc Vetri, among many others.

This variety of professional experiences helped to form the basis for the founding of Greenwood Advisory, with an intense desire to better integrate the myriad disciplines that participate in bringing hospitality projects to market. His transition from hands-on culinary roles to strategic development began with consulting work at Sprout LA, and flourished during his tenure as VP of Restaurant Development at Tartine Group. There, he honed his skills in site evaluation, project management, and construction administration. With Greenwood Advisory, he now leverages this wealth of experience to forge strategic partnerships, while ensuring that each project benefits from his comprehensive expertise and innovative vision.

Kim Washington, Project Manager

As a PMP-certified project management specialist with over 20 years of experience leading diverse projects across a variety of industries, Kim’s expertise centers on empowering organizations through strategic planning, stakeholder management, and identifying opportunities for enhanced efficiencies & value engineering.

She has successfully led start-up operations in multiple countries, including the successful installation & implementation of a ghost kitchen brand in Long Beach (CA), two radio stations in Chad, and a number of pro bono legal clinics in Iraq, among many others. With Greenwood Advisory, she leverages her varied experience to provide tailored project management solutions & strategic development insights in support of our clients and internal organizational growth.

Eunji Kim, Project Manager

Eunji brings a unique blend of architecture, construction management, and restaurant operations to her role as a Project Manager.

With a degree in architecture & construction, she has helped develop projects ranging from residential remodels to 3-Michelin star restaurants, combining her passion for foodservice & exceptional dining experiences with a meticulous approach to managing design & construction teams. With nearly two decades of experience in these fields, her prolific background provides a deep understanding of how spaces function for both staff and guests, ensuring every project is delivered with precision, efficiency, and creativity.
